Diocesan office workers share recipes that respect Lenten regulations

Once again, office workers from the diocesan chancery and St. Stephen Diocesan Center scoured their family cookbooks and recipe files for some delicious, nutritious Lenten dishes to feed their fellow coworkers.

The occasion was the annual Hawaii Catholic Herald Meatless Lenten Luncheon Feb. 16 in the fifth floor conference room in the downtown chancery.

In addition to the camaraderie and the enjoyment of a fantastic meal, the primary goal of the luncheon was to taste-test and share wholesome, nutritious, canonically-acceptable Friday Lenten fare with Hawaii Catholic Herald readers.

The menu crossed a variety of ethnicities — from Chili Relleno casserole, Tortilla Salad and Spanish Shrimp and Scallops to Asian Cabbage Salad, Broccoli Mandarin Orange Salad and Crab Mandoo. And, of course, rice and French bread from Safeway.
